2006 Cabernet Franc Icewine, 200ml

Vintage Year and Viticulture:
The winter of 2005/2006 was fairly mild in comparison to recent winters with no major cold spells. With a considerable amount of rain throughout the summer in conjunction with seasonally higher summer temperatures, the end result was an exceptional growing season. With harvest around the corner, September and October brought cooler temperatures and an increase in precipitation. There were few times where we had more than 3 - 4 days without rain. Sunny breaks in October and early November along with warm temperatures, allowed the grapes to complete their ripening. Colder temperatures in November and December prevented degradation of the Cabernet Franc grapes. Harvest proved to be fruitful with excellent Brix levels and high acidity. This lot of 100Cabernet Franc was harvested from Reif Estates 125 acre Vineyard located adjacent to the Niagara River, midway between Lake Ontario and the Niagara Escarpment. The grapes were hand-harvested in early December; on the 4th and 12th of 2006. Average picking temperatures were -10°C with Brix levels reaching 37.0°. High Pressure Vertical Basket Presses imported from Italy were used to maximize the extract from the berries.

Winemaker's Notes:
The juice pressed from extremely clean fruit underwent temperature-controlled fermentation (less than 15°C), using selected yeast for cold slow fermenting. Fermentation lasted for seven months in stainless steel tanks to highlight the complexity of berry fruit characteristics native to Cabernet Franc.

Tasting Notes:
With light, garnet coloured hues, this wine is as appealing to the eye as it is to the palate. Aromas of sweet candied berries meet the nose and are followed by ripe, red raspberry and strawberry flavours. An elegant fresh finish highlights this wines balance of acidity and sugar levels.
