The Story:
The Winter Solstice is a celebration of light and marks the beginning of the new solar year, it is a festival of inner renewal and honouring Mother Earth. On December 22, 2007 we marked the beginning of a new wine’s life; 23 barrels were filled with Merlot, 11 barrels were filled with Syrah, and 10 barrels with Cabernet Sauvignon. For a year those wines remained in darkness developing concentration of fruit, structure and balanced finesse. On December 21, 2008 those wines were brought back into the light and blended together to begin our celebration of renewal. As is custom with the season, please enjoy this wine with friends and family and toast Mother Earth.
The Blend:
52% Merlot- sourced from our Lot 31 vineyard, planted in 1978
25% Syrah- sourced from our Lot 31 vineyard, planted in 2002
23% Cabernet Sauvignon- sourced from our Lot 31 vineyard, planted in 1978
Winemakers Notes:
- Specific barrels were chosen because of their individual uniqueness. Regular tasting of the barrels provided assurance that the blend would be a different flavour profile to anything else available.
- Aging in a mixture of American and French oak for a period of 364 days and full malolactic fermentation.
- Unfiltered and egg white fined.
Taste profile:
- A unique blend providing unique flavour profiles. The wine is soft and approachable right away, with notes of field berries and earthiness, but underlying threads of licorice, cocoa and fresh tobacco.
- As this wine ages, I expect it will retain the earthy, licorice and tobacco components but the fruit will change from field-fresh to more jam preserve or stewed fruit. I expect this wine to age gracefully at least until 2018.
