Light gold in colour, with tiny bubbles dancing steadily up through the glass, this delightful sparkler shows its fruit, primarily peach and citrus, before it reveals the fresh yeastiness that is typical of this style of wine. The Riesling grape is used in the best sparkling wines from Germany, for good reason - it makes great bubbly and this Niagara Riesling, made by the labour-intensive traditional method really shows its pedigree.
The cool climate gives it the acidity that is needed for freshness and elegance. In the mouth, this wine is delightfully light but extremely elegant. It shows lemon, lime and peach on the palate and a delicate mousse. It leaves the mouth refreshed and the lovely flavour lingers. Serve throughout 2009 and into early 2010 to toast a special occasion or just for the pleasure of a fine wine. It works best on its own as an aperitif, with
caviar and with oysters on the half shell but has enough body to stand up to some lighter dishes or mild cheese.
