Flavour:
Stick this bright youngster away for a bout two years to soften the edges. The bright, fragrant nicely ripe youthful raspberry fruit should hold, as well as gentle light green herb and spicy oak complexity. Good ripeness for Niagara cabernet. It’s mid-weight red with juicy fruit, firm acidity and fairly fine, slightly bitter tannin. Good to very good length. Best 2005 to 2008.
Vinification Comments: Grapes were gently pressed. Fermentation with skin contact. Malolactic Fermentation followed for added complexity and roundness. Aged in French Oak for 12 months before release
Food Pairings: Great on its own, but compliments many dishes. Red meats, barbeque, even gourmet pizza.
