|2006 Dry Riesling|
VQA NIAGARA ON THE LAKE
Our youngest vines, Riesling Clone 21, contribute 81% of the grapes making up this wine. At 6 years of age, these vines contribute a youthful core of acidity balanced by intense flavours of lemonade, grapefruit and citrus salad. The remaining 29% of the blend comes from our Old Vines Riesling, planted in 1976, which were harvested at incredibly low levels. These grapes add complexity to the wine by contributing delicate tropical notes of pineapple and orange blossom.
The Riesling grapes underwent a gentle pressing after which the juice, or must, was cold settled. Each plot was then divided into smaller lots with each lot undergoing a long, cool fermentation in stainless steel tanks using different strains of yeast in order to capture many of the delicate aromas which are characteristic of Riesling wines. Once fermentation was completed, each batch was specially selected for complexity and depth of flavour before blending.
This dry, white wine explodes with flavours of white grapefruit and lemons while on the palate, the excellent structure and core of youthful acidity balance the intense flavours of freshly squeezed lemonade, orange blossoms and tropical fruits. Great as an aperitif or with salads, roasted turkey, glazed ham, shellfish, soft rind cheeses and sushi. Drink now or age up to 3 years. Serve chilled.
“…The Dry is a zero, made up from 81% of those young Riesling vines … peach and lime make up the nose, with tastes of peach, tart apple and a touch of petrol. This wine has lots of zip and zing, it’s dry and crisp in the mouth with a lengthy white peach and Granny Smith finish – those youngsters certainly did their job…” Michael Pinkus, Ontario Wine Review, October 30, 2007
