2006 Cabernet-Franc Icewine VQA

Each year Canadian winemakers wait for the arrival of the winter’s cold and the conditions that enable them to make their internationally reknowned Icewine. And for the 2006 vintage, the cold came a little later than usual and a little colder than usual—on January 21, 2007, the temperature dipped to minus13 degrees Celsius.
These excellent harvest conditions resulted in the juice being concentrated to nearly twice its normal sweetness, compared with regular harvest. It was slowly fermented over several weeks and a portion was aged in oak barrels, adding complexity and a hint of tannic structure.
Wonderfully complex and subtle aromas of raspberries, flowers and tropical fruits delight the nose. These are joined on the palate by a gentle hint of dried herbs and touch of caramel. The wine has a round luscious texture and a refreshing finish that lingers delightfully. Serve lightly chilled as an aperitif before a meal, at the end of a meal, or by itself.
