REVIEWS / AWARDS
“The first time I tasted this, it was served side by side with Pol Roger Brut. This was better. It continues to be one of the finest bubblies in Canada. Very fine mousse with tiny, fast-paced, and lingering bubbles. Light mineral nose with an elegant, sweet, pastry dough flavour and hints of russet apple, lemon drops and key lime pie. Dry and medium bodied.”
-- Konrad Ejbich, Pocket Guide to Ontario Wines, Wineries, Vineyards and Vines.

“Made in the traditional ‘method champenoise’, this blend of Pinot Noir and Chardonnay is hand harvested and gently whole cluster pressed to preserve the fresh fruity character and give it soft, mellow tannins. Bottle aged for 30 months, it has an elegant mouthfeel, with a delicate mousse, showing a lemon colour, with green apple and classic yeasty biscuit notes.”
-- Barbara D. Ritchie, Elite, Volume 14-4
