DESCRIPTION
A wine with complex and elegant aromas. Bright fruit with subtle toast and baked apple tones.
WINEMAKER'S NOTES
Made from the blending of Chardonnay and Pinot Noir.
Grapes were hand picked and bunch selected. Gentle whole cluster pressing followed.
Secondary fermentation was finished in bottle followed by a further 30 months aging on the
lees.
Able to develop for 2-3 years but intended for drinking upon release.

continues to be one of the finest bubblies in Canada. Very fine mousse with tiny, fast-paced, and
lingering bubbles. Light mineral nose with an elegant, sweet, pastry dough flavour and hints of russet
apple, lemon drops and key lime pie. Dry and medium bodied.”

showing a lemon colour, with green apple and classic yeasty biscuit notes.”
