Description
Intense citrius fruit including frapefruit and lime. Pear and peach characteristics are followed by spicy, lingering pear notes onthe finish. Age 1-8 years from vintage.

Winemaker's Notes
* Made from grapes grown by Henry of Pelham Estate within the Short Hills area and one other site on the Beamsville Bench.
* Harvest Date: December 8th, 2008-January 6th, 2009
* 31.06 Brix at harvest with yields averaging 45 hL/ha.
* Harvested at temperatures of – 4 to – 8 °C, these grapes are treated and pressed just as Icewine grapes are.
* Fermentation occurred in stainless steel tanks leaving 144g/l residual sugar.

Food Matches
Fresh fruits, fresh soft cheeses with some of the more mild blue cheeses and salmon mousse.
