DESCRIPTION
The blending of Cabernet Sauvignon, Cabernet Franc and Merlot has created a wine that exhibits plush fruit supported by tannin depth with elegance, suppleness and structure.
We make this wine so that it may reward its cellaring for a number of years rather then merely surviving it.
A youthful wine will therefore exhibit well structured tannins that demands a complimenting food while a wine with greater than 4 years of age will begin to deliver nuances of flavour, texture and length that can only be achieved by making the wine in this traditional style.

WINEMAKER'S NOTES
Made from our own estate Cabernet Sauvignon, Cabernet Franc and Merlot, and also sourced from several other select vineyard sites in Niagara.
Harvest Dates: Sept 13,14,22,27,30 and Oct 1 (Merlot); Oct 4,5 (Cabernet Franc); Oct 5,13,14 (Cabernet Sauvignon)
Yields limited to 2 to 3 Tonnes /acre (~43 hL/ha)
Fermented in stainless with extended maceration and aging in French and American oak barrels, 40% new for 18 months.
