Description: Nose of chocolate, smoked plums, cherries and wild berries. Complex and tightly structured, chunky, rich and supple with wonderful warm, mouth-filling plummy characters. The oak influence is nutty - almost almond.
Grape Vineyard: Niagara on the Lake
Vinification Comments: the 2003 season was warm and dry. Both the Cabernet and Merlot vines had substantial leaf removal, to ensure maximum sunshine. The fruit was harvested at peak ripeness, with beautiful varietal characters.
After crushing, the grapes were fermented on their skins. Extended skin maceration has helped flavour development. Malolactic fermentation has softened the wine and added depth and complexity.
After blending, the wine was aged in one and two year old French barriques.
