Grapes were harvested on January 20, 2008, at 3 am at -12 degrees Celsius and pressed at -14 Celsius. Because of the hardness of the fruit, pressing was a long and tedious process, but the juice obtained was of the highest Brix that we at Stoney Ridge have ever made, ranging from 37.7 – 46.7 Brix.
Juices this high also result in a very slow fermentation, capturing all of the flavours and aromas of mango, lychee, and a trace of dried apricot. Viscous and aromatic, this wine also contains just a hint of honey on the nose.
Serve lightly chilled with fruit, fruit compotes and aged cheeses.
