2007 BARREL FERMENTED CHARDONNAY

The Vineyard
The 2007 growing season was considered to be one of the best vintages in the Niagara Peninsula and this is reflected in our Chardonnay. Harvested on September 17th, 2007, the grapes achieved perfect physiological ripeness while maintaining a balanced acidity level. Throughout the growing season, the crop levels were reduced through bunch thinning at both bloom and verasion resulting in a yield of just 1.06 tonnes per acre resulting in grapes that display wonderful ripe characteristics of apples, pears and tropical fruit notes.
The Winery
The Chardonnay grapes underwent a gentle pressing after which the juice, or must, was cold settled. Eighty-two percent of the juice was then transferred into French oak barrels and inoculated with yeast that highlights the delicate characteristics of Chardonnay. The remaining 18% of juice was fermented in stainless steel tanks to maintain the wonderful fruit characteristics. Once the primary fermentation was completed, the wine underwent malolactic fermentation in the barrels and aged for four months. During this ageing, the lees, or yeast cells, were stirred in the barrels resulting in a softening of the oak characteristic in the wine. Once the oak ageing was complete, the barrels were then blended together and prepared for bottling in April 2008.
The Wine
This wine has a wonderful balance between the ripe fruit characteristics of apple, pear and tropical notes and the smoky vanilla and toasted oak aromas contributed by the delicate barrel ageing. A round mouth feel is balanced by a softer acidity giving the wine a seductive richness on the palate. Try this wine with BBQed meats, lobster, scallops, fettucine alfredo or chicken in cream sauces. Drink now or age up to 4 years. Serve lightly chilled.
