The Vineyard

This wine is 100% Pinot Noir Clone 115 which were harvested on September 25, 2007 at a yield of 1.9 tonnes per acre. In order to achieve maximum physiological ripeness, the vines were bunch thinned twice throughout the growing season in order to reduce the crop load for each vine and the leaves surrounding the fruit was selectively removed to prevent shading, while ensuring to maintain enough leaves to maximize sugar production and ripening of the grapes. The 2007 was a phenomenal vintage, expected to produce some of the best wines in recent Ontario history. The growing season was long and dry with heat and dryness extending into the harvest providing us with the luxury of harvesting at the ideal time. This resulted in grapes with concentrated flavours and optimum ripeness levels.

The Winery
This dry, red wine exhibits complex aromas and flavours of earthy strawberries, raspberries and cranberries with just a hint of spice. Fine tannins on the palate balance the soft acidity making it a pleasure to drink. A great match for salmon, tuna, roasted chicken, pizza, hamburgers and soft cheeses. Drink now or age up to 3 years. Serve cellar temperature or lightly chilled.
