The grapes all came from Niagara on the Lake sub-appellation (although the wine is under the Niagara Peninsula appellation) The wine was aged in new and one year old American and French Barrels. The barrel aging lasted about four months. Our philosophy on the barrel aged Chardonnay is: “Oak should be to wine what seasoning is to food-just enough to provide interest and accent but not so much that it overwhelms”.
This is a food-friendly Chardonnay with sweet oak aromas of coconut and vanilla that are balanced on the palate with a citrus-mineral quality. The texture is soft and smooth with a gentle lingering finish. Serve with pasta, fish or poultry.
