The Icewine harvest for the 2004 vintage occurred in two phases. The first winter cold arrived in Niagara-on-the-Lake on December 27, 2004, with a low temperature of –11C. This gave our vineyard crew a short harvesting opportunity—four hours—in which they brought in two-thirds of the crop. The cold was not to return until January 17 when the rest of the icewine grapes were harvested, also at –11C. These grapes had remained on the vine for more than two months beyond normal harvest as we waited for the cold and additional flavour development. And one-third of the grapes had an extra three weeks, which encouraged flavour differences and added to the complexity of the wine.
Intense aromas of dried apricot and peach mingle with an undertone of smokey tea. A note of caramel arises on the palate which is sweet, smooth, luscious and rich. The flavours linger to a long finish where a tangy acidity provides a refreshing close. Serve lightly chilled as an aperitif before a meal, with a rich appetizer such as foie gras, with a dessert at the end of a meal, or by itself.
